Cocción a baja temperatura
Es una conocida técnica usada habitualmente por los chefs profesionales. Controla con precisión la temperatura en cocciones largas. Como principales beneficios, realza el sabor de la comida, mantiene los jugos de los alimentos y ablanda las fibras, de modo que obtiene texturas muy tiernas; cuece uniforme y perfectamente las porciones, y ahorra tiempo, ya que puede prepararse con antelación.
